Bring that state fair vibe home with delicious Churro Nachos. Crunchy, baked churro chips are topped with vanilla ice cream, peanut butter caramel sauce, Unicoi Preserves Strawberry Vanilla topping, peanuts and cinnamon whipped cream. Suzy created this award winning recipe for the Taste of the Fair recipe contest, sponsored by The Dairy Alliance.
Ingredients
- 1 cup granulated sugar
- ¼ cup water
- ¾ teaspoon salt
- 3 tablespoons butter
- 1 tablespoon peanut butter
- ½ cup heavy whipping cream
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- 8 (6 inch) flour tortillas
- 3 tablespoons melted butter
- 1 cup granulated sugar
- 1 tablespoon cinnamon
- ¼ teaspoon salt
- 1/8 teaspoon cayenne pepper
- 2 cups sliced strawberries

Directions
Peanut butter caramel sauce
In a large, heavy-bottomed saucepan, combine sugar and water, stir to combine. Heat mixture over medium-high heat. Do not stir the mixture while heating. Cook 8-10 minutes, until sugar mixture reaches a light caramel color. The color will change quickly, so don’t walk away to avoid burning the sugar.
- Remove pan from burner. Immediately whisk in salt, butter and peanut butter until melted, then quickly whisk in heavy cream. The mixture will bubble up violently so be careful. Transfer to a glass canning jar and cool slightly before using.
Cinnamon whipped cream
Add cold heavy cream, powdered sugar, cinnamon and vanilla to the bowl of a stand mixer fitted with whisk attachment. Whisk on medium-high speed until stiff peaks form. Add whipped cream to piping bag fitted with star tip and refrigerate until ready to build nachos.
Churro chips
Preheat oven to 375 degrees.
- Melt butter in microwave safe bowl.
- Place sugar, cinnamon, salt and cayenne in a gallon zip top bag, shake to combine.
- Slice each tortilla into 6 wedges, then brush each side of the wedges with melted butter. Place wedges in zip top bag of cinnamon sugar and shake to coat.
- Place sugared wedges in single layer on 2 baking sheets lined with silicone baking mats or parchment paper, bake 10-12 minutes or until lightly browned. Remove to cooling rack, chips will get firmer as they cool.
Strawberry topping
Add sliced strawberries to bowl, then gently stir in Unicoi Preserves Strawberry Vanilla Spread.
Build Churro Nachos
- Pile churro chips on serving dish.
- Add a big scoop of vanilla ice cream.
Top with glazed strawberries, generous drizzles of peanut butter caramel sauce, chopped peanuts, cinnamon whipped cream, and sprinkles. Finish with a cherry on top!
