Ingredients
2 tbsp. olive oil
2 cloves garlic, minced
2 tsp. all-purpose flour
1 cup milk
1/2 tsp. kosher salt
1/2 tsp. black pepper, coarse grind
4 oz. smoked cream cheese, room temperature
1/2 cup grated Parmesan cheese, plus additional for serving
8 oz. fresh asparagus, trimmed and cut into 1 inch pieces
1 tsp. fresh lemon zest
8 oz. linguine, cooked al dente, with 1 cup cooking water reserved
Add olive oil to a skillet over medium heat. Add garlic and cook a minute to soften. Stir in flour and cook for 1 minute. Whisk in milk, kosher salt, and black pepper until just thickened, about 3 to 4 minutes.
Add smoked cream cheese and Parmesan cheese, whisk until melted.
Stir in the asparagus and lemon zest, then put a lid on the skillet, and simmer until asparagus is cooked to your liking
Make the pasta
Add drained linguine to the sauce, and stir. If sauce is thicker then you
like, add some of the reserved pasta water. Did you forget to save some pasta
water? It happens! Just stir in some tap water, your sauce it will be fine.
Taste and adjust for seasoning.
Transfer to a warmed pasta bowl, top with grated Parmesan, basil, and bacon. Serve immediately.
