Make a batch of crepes and let the celebration begin! We made a delicious crepe cake, filled with a creamy mixture of mascarpone cheese and Unicoi Preserves Strawberry Vanilla Spread. This is a great do ahead dessert that will make your guests think you've been in the kitchen all day, but really, you had it put together in a snap! Your secret is safe with us.
Crepe cake is the perfect summertime cake because you don't have to turn on the oven! To make a Celebration Crepe Cake, we started by making a batch of our Easy Crepes. To make the decadent and delicious Celebration Crepe Cake filling, we simply stirred together creamy mascarpone cheese and Unicoi Preserves Strawberry Vanilla Spread, so simple, so good! This recipe will make your guests think you've been in the kitchen all day, but really, it's not much harder then making a PB & J!
Add mascarpone cheese to a mixing bowl. Stir in one jar (4 oz.) Unicoi Preserves Strawberry Vanilla Spread until well combined.
Make the crepe cake
Lay a crepe on your serving plate, then spread to cover with strawberry-mascarpone cheese. Top with another crepe, and repeat until all the cheese mixture has been used, finishing with a crepe on top. I lost count, but think I used 12 crepes. This will vary based on how thickly you spread the cheese mixture.
Dust with confectioners sugar, cover and refrigerate until ready to serve. This dessert is ideal to make in advance, the layers firm up nicely if you give it some time in the refrigerator. Cover with plastic wrap before refrigerating.
When ready to serve, dust with confectioners sugar, slice, and plate with additional Unicoi Preserves Strawberry Vanilla Spread. Dust with sprinkles, this IS a Celebration Crepe Crepe Cake after all!
