Ingredients
Sandwich ingredients:
  • 1 4 oz. jar Unicoi Preserves Apple Cider Pepper Spread
  • 12 Kings Hawaiian Savory Butter Rolls
  • 1/2 lb. Boars Head Baby Swiss Cheese, sliced thinly
  • 1/2 lb. Boars Head Smokemaster Beechwood Smoked Ham, shaved
  • 1/2 lb. Boars Head Black Forest Turkey Breast, shaved
  • Yellow Mustard
  • Optional: Minced parsley and apple slices
Sauce ingredients:
  • 4 tablespoons butter, unsalted
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Lawry's Seasoned Salt

Sauce:
  1. Melt butter and whisk in onion powder and seasoned salt. Set aside and make sandwiches.
Sandwich:
  1. Preheat oven to 350 degrees. Slice rolls in half horizontally so you have a top and bottom half, not tearing rolls apart. Place bottom half of rolls on a baking sheet. Spread the bottom layer of rolls with about half a jar of Unicoi Preserves Apple Cider Pepper Spread, then layer the shaved ham, add a layer of sliced cheese, then the shaved turkey and another layer of sliced cheese.
  2. Spread yellow mustard lightly on the cut side of the bun tops, then place it on top of the meat and cheese and bottom bun.
  3. Use a silicone brush and brush the sauce on the assembled sandwiches.
  4. Wrap with foil and bake in a preheated oven for 20-25 minutes or until cheese is melted. Remove foil and bake for another 5 minutes to lightly brown the buns.
  5. Optional: Sprinkle with finely minced parsley and serve with apple slices.
  6. Make ahead directions: Assemble sandwiches but do not sauce them. Place sandwiches back in original Kings Hawaiian tray and bag, store in refrigerator or cooler until needed. When ready to serve, simply make the sauce then brush sandwiches with it and follow above baking directions. Sandwiches may need to bake a little longer with the foil on depending on how cold they are.

Here’s a festive, delicious and easy recipe that travels well because you put it together when you get to your holiday party. I served this at Elder’s Ace Hardware Christmas Open House in Chattanooga, Tennessee, a three hour trip from our home. I simply packed my Palmetto Pimento Cheese in a cooler and took some of our Strawberry Vanilla Spread and the rest of my supplies in a basket.

  • 24 oz. Palmetto Pimento Cheese Original, Jalapeno or Bacon
  • 2 jars Unicoi Preserves Strawberry Vanilla Spread
  • Front Porch Sea Salt Roasted Pecans
  • Crackers

  1. Spoon Palmetto Pimento Cheese in a round wreath shape on your party platter. I chose a platter that had a lip so I just followed the line. If your platter doesn't have an interior lip, simply put a glass in the middle to leave space and spoon your pimento cheese in a circle. This doesn't have to be perfect.

  2. Decorate the pimento cheese wreath with pecans.

  3. Spoon two jars of Unicoi Preserves Strawberry Vanilla Spread into the middle of the pimento cheese wreath.

  4. Serve Pimento Cheese Wreath with crackers of your choice.

Ingredients
  • 2 cups All purpose flour
  • 1 Tablespoon Baking powder
  • 1 Teaspoon Kosher Salt
  • 4 oz. Cabot Extra Sharp Cheddar
  • 1 cup Heavy whipping cream

  1. Preheat oven to 425 degrees with rack in upper third of oven. Cut cheese into small cubes.

  2. Measure the flour, baking powder, and kosher salt into the work bowl of your food processor and pulse to combine, then add the cheese cubes and process until the cheese is finely chopped. Add the heavy whipping cream, and pulse until the dough comes together. Transfer the dough to a lightly floured work surface.

  3. Roll dough to approx. 1 inch thickness and cut with biscuit cutter. Tip: To get the best rise, cut straight down, don't twist the cutter.

  4. Place into a lightly greased cast iron skillet, with biscuits touching. My pan held 9 biscuits and I had a little dough left over.
  5. Bake for 15-20 minutes or until golden brown. Baking time will depend on how thick you have rolled them, so keep an eye on them!

  6. Serve warm with butter and Unicoi Preserves. Leftovers? Split them in half and toast them under the broiler. Extra delicious!

Zombie Brains Cheese Ball, inspired by The Walking Dead, make a creepy but tasty appetizer for Halloween snacking.

Ingredients
  • 6 oz. Proscuitto
  • 8 oz. Cream Cheese, softened
  • 8 oz. Ricotta cheese
  • 8 oz. Mozzarella cheese, shredded
  • 1/2 cup Dried cranberries
  • 4 oz. Unicoi Preserves Strawberry Vanilla Spread

  1. Line a small mixing bowl with plastic wrap and spray with non-stick cooking spray.
  2. To build the outside of the brain, tear the prosciutto into bite size pieces and use them to line the bowl, saving some for the bottom of your cheese ball.
  3. Place the cream cheese and ricotta in a bowl and using a mixer, whip it until its combined and creamy, then mix in the mozzarella and dried cranberries.
  4. Take two tablespoons of Strawberry Vanilla Spread and microwave it 10-15 seconds to loosen it up a bit, then spread it on the prosciutto lined bowl.
  5. Gently spoon the cheese mixture into the bowl and use the remaining prosciutto to cover the top of the bowl. (This will actually be the bottom of the cheese ball when you unmold it.)
  6. Fold the plastic wrap over the bottom and refrigerate for 2+ hours, longer is better.
  7. To serve, invert the bowl on a serving dish and gently removed the bowl and plastic wrap.
  8. Warm the remaining Strawberry Vanilla Spread and use it to drizzle over the brain.

  9. Serve with crackers or toasted baguettes.

Bundles of Joy were born because I needed a fast appetizer to take to a party over the July 4th weekend. I was short on time since I took a late afternoon nap after doing product demo at Habersham Winery.

This delicious appetizer using puff pastry recipe was inspired by Pepperidge Farms. My version uses only 4 ingredients and is simple to put together, so you can go ahead and take a nap before your get together.  You’ll awaken refreshed and ready to receive compliments on your dish.

Ingredients
  • 1 sheet Puff Pastry Comes two sheets to a package. Reserve one sheet for future use
  • 1 Egg Whisked with 1 Tablespoon water
  • 1/4 cup Unicoi Preserves Vineyard Fire or Strawberry Vanilla Spread
  • 4 oz. Goat cheese Crumbled
  • Flour for dusting work surface

  1. Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper and set aside
  2. Sprinkle work surface with flour. Unfold puff pastry dough and using a rolling pin, roll out to an approx. 12 inch rectangle. If dough starts to come apart at fold lines, simply wet your finger and press lightly to seal.
  3. Cut dough into 24, approx. 2 inch squares. I used a pizza cutter to do this. You don't have to be perfect here, just try and make them similar in size and shape.
  4. Spoon about 2 teaspoons of goat cheese in the center of each square, then top each with about 1/2 teaspoon full of Unicoi Preserves.
  5. Using the egg wash you made, brush the two opposite corners of the pastry lightly, then fold the corners up and together, pressing firmly to seal your Bundles of Joy.
  6. Place each finished Bundle on your parchment lined baking sheet. When you've filled them all, brush lightly with egg wash.
  7. Bake in preheated, 400 degree over for approx. 15 minutes, or until pastry is puffed and lightly golden brown.
  8. Cool on wire rack and serve at room temperature.
